A classic hearty and filling lentil soup recipe to warm your soul! This one-pot healthy lentil soup is so easy to make, great for vegans and vegetarians, and a sure staple in my diet! This lentil soup is a nutritional powerhouse. It combines the nutrient, proteins, good carbs & fiber in lentils with the antioxidant power of veggies. Enjoy!
1 cup of veggie broth (preferably homemade)
2 cups of water
1 cup of organic green lentils
1/2 cup of chopped carrots
1/4 cup of chopped white onions
1/4 cup of chopped celery
1 finely diced garlic clove
1 tbsp of olive oil
turmeric, salt, & pepper to taste
Sauté the onions, carrots, celery, and garlic in olive oil. In a separate pot, mix the lentils with the water and broth. Cook the lentils for 20-30 min--bring to a boil over a medium-high heat. Bring to a simmer once the lentils have been cooking for 15min, add the sautéed vegetables, turmeric, salt, and pepper. Taste, and add additional seasonings if desired. Cover the pot, and allow it to simmer for 15 more minutes or until the soup reaches your desired consistency.
