Vegan Banana Oat Pancakes

As baby Shiva gets introduced to more foods, I get the opportunity to get creative with the ingredients she already loves. These pancakes she loves, I make a bunch of them and freeze them in packs of four. I defrost and serve with a side of fruit and her green juice for a nutritious, yummy breakfast!

P.S: This recipe is not only for babies - You should try them too!

 

INGREDIENTS:

  • 1 Cup Gluten Free Rolled Oats ( I use Bobs Redmill Rolled Oats )
  • 1/2 Cup Coconut Milk
  • 1 Ripe Banana
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • *Optional - 1 Teaspoon Vanilla Extract
  • Coconut Oil, For Cooking
  • * Optional - Maple Syrup 

INSTRUCTIONS: 

  • Place all the ingredients in a blender, roll oats, coconut milk, banana, vanilla, baking powder, salt. Process until completely smooth.
  • Brush coconut oil in a non-stick pan over medium heat. Add batter and cook until edges are golden brown, about 2-3 minutes, flip the pancake and cook for another 2-3 minutes. Repeat until batter is all gone. Enjoy!
