Tropical Mango Guacamole

Summer is around the corner and with it comes mango season! Having my own mango tree pushes me to get creative in the kitchen with mango-based dishes. I have always been a huge fan of mangos as they are a high source of vitamin A and C, as well as potassium, fiber, and folate. So why not add it to everyone's favorite summer dish? Guacamole!
Tropical mango guacamole, if you will. Any mango variety works for this recipe and it is very important to use ripe mangos. Siete Foods almond tortilla chips are my vehicle of choice for guacamole, but this tropical mango guacamole would taste fabulous paired with grilled fish or veggie tacos. Amigos, I hope you all enjoy! 

INGREDIENTS (makes 1 1/2 cups)
3 ripe avocados, pitted
1 ripe mango, diced into 1/2 inch cubes  
1/4 large white onion, finely chopped
juice of 2 limes, plus more to taste
pinch of Himalayan pink salt
big handful of cilantro, finely chopped
freshly ground pepper 
site food tortilla chips

DIRECTIONS
Scoop the avocado flesh into a medium bowl. Add the mango, lime juice and salt. Smash the avocados with a large dinner fork and fold together until well mixed. I like a chunky texture, but feel free to keep going if you like a smoother mash. Add the cilantro, and mix to distribute evenly. Season to taste with salt and pepper. Serve with tortilla chips!
