Superfood Highlight: Eggs

Do you eat eggs? During this pregnancy, my egg cravings have been off the charts! I have a love/hate relationship with them. There are phases in my life where I avoid them at all costs. Still, pregnancy makes my body & baby crave the extra protein, so I make sure only to feed us organic pasture-raised eggs. 
In Dr. Will Cole's book, Ketotarian, he talks about the egg yolk as a natural source of multi-vitamin. So why does it get such a bad rap? This part of the egg is rich in fat & cholesterol, so some people are concerned that they are feeding themselves too much of something that their brain actually needs to function! Remember, fat = brain food.
Not all eggs benefit our bodies the same way. When shopping for eggs, always look for "organic & pastured raised," the best approach for this is sourcing from a local farm you love & trust. We take family weekend trips to Aloha Farms or Little River Farms in Homestead to get our eggs, but I replace them with Vital Farms when those are unavailable. 
Pasture-raised, hormone-free chickens that get exposed to the sun & roam around freely have yolks that contain 3x more Omega-3 Fatty Acids than conventional supermarket eggs. You can tell the difference in quality by just cracking two eggs for comparison. I'm serious! The egg yolk is where the egg holds most of its nutrients, so a good, healthy yolk needs to be bright & yellow before consumption.
