A new week calls for a new recipe, and this one is extra special as it is close to my heart & upbringing. As I write this, I can still replay the memories of my mom making us arepas before school and on the weekends as a kid. Now that I am a mother, I have created the same tradition (with a healthier twist) for my daughter to connect to her culture in a fun & yummy way. This arepa recipe is gluten-free & Shiva's favorite part about it is rotating all the fun & tasty toppings as we decorate them together. Her favorite arepa has a little bit of vegan cheese sprinkled on top & a dose of love from mommy.

1 Cup Grounded Quinoa or Quinoa Flour
1 Cup Cassava Flour
1 Cup Oat Flour
Shredded Violife Mozzarella Cheese ( to taste )
Kite Hill Plain Cream Cheese ( to taste )
2-3 Tablespoons of Coconut Oil
1 Cup Coconut Milk
Salt to Taste
Mix all 3 flours with milk and all necessary ingredients until creating a smooth dough. Make 8-10 small balls and shape into circles aka arepa shape. Cook on a pan at a simmer for 10-15 min and constantly flip over. Serve warm with Ghee salt & pepper to taste.
