Pasta Pomodoro Sauce

Our recipes have quickly become one of your favorite topics to indulge on at de la heart, so we've decided to bring you more. Today I am sharing my husband's quick Pomodoro recipe. You can serve this fresh sauce over pasta or swap out your usual pizza sauce for this tasty delight! We pick fresh basil from our garden & it makes a world of difference! Enjoy!

INGREDIENTS
¼ Cup of Extra Virgin Olive Oil
1 Medium Onion, Finely Chopped
1 Large Carrot, Diced
1 Celery Stalk, Diced
1- 28 Ounce Can of Whole Peeled Tomatoes
3 Large Basil Springs

DIRECTIONS

Place the onion, carrot, and celery into a hand blender base with 3 tablespoons of extra virgin olive oil. Process on low until the ingredients become pureed.

Next, turn the stove on to low heat and transfer the puree into a large pot. Place the pot on top of the stove, and add 3-4 tablespoons of EVOO. Let simmer for 15 minutes.

In the meantime, add the can of tomatoes to a blender and blend on low until completely smooth.

Combine the onion, carrot and celery puree to the tomato sauce and continue to simmer for 20 minutes. Add salt and pepper to your liking.

To finish, add in fresh basil at the very end - Let sit for 5 mintues. Serve with your favorite pasta, and enjoy!
