Inner Glow Smoothie

I've recently become obsessed with the Ketotarian diet, a plant-based take on the high carb, high fat Keto diet. One of my favorite ways of adapting this eating style into my diet is by having a breakfast full of healthy plant-based fats. Because I prefer working out in the morning, I choose to eat lighter foods like smoothies or avocado toast to keep me full & energized until lunchtime comes around. Below is my high-fat, whole protein & fiber-rich smoothie recipe that will keep you full for hours, especially on the days where you have zero downtime. I guarantee that if you begin to add healthy fats into your meals you will start to notice your inner glow come out into the world.

INGREDIENTS serves 16 oz (2 people)
1 cup of fresh curly kale
1 cup of spinach
1/2 cup of frozen pineapple
1/2 avocado
1 cup of coconut water
2 teaspoons of coconut oil
1 inch of ginger root, peeled and chopped
Juice from 1/2 lime

DIRECTIONS
Add all your ingredients into a Vitamix-like blender. Blend until smooth. If using fresh fruit, add ice to achieve desired temperature. Enjoy!
