Healthy Eats: Parsley Pesto

I love food and I love health. The more I learn about food the more I want to eat for health. Parsley is very skilled at alkalizing all the body systems. When the body becomes acidic, disease can occur. Our goal is to always keep it alkaline. Well, parsley fight acidosis. Fun! Right? This brings me to my Parsley Pesto recipe. Delicious, easy to make, and you can use it as dip, salad dressing, or sauce. Pictured as dressing in my kale salad. 

Makes 1 or 2 servings 

INGREDIENTS
2 cups packed parsley
1/4 cup pine nuts (or hemp seeds if allergic to nuts)
1/2 lemon, juiced
2 garlic cloves
2 tablespoons olive oil
pinch of Himalayan salt

Place all the ingredients in a food processor until well combined. Serve the pesto into a small bowl and enjoy!
