A vegetarian-conscious diet could cut those emissions by up to 70%.
Our #girlofthemonth Valentina Cordero, a renowned vegan chef, is sharing with us an easy and delicious recipe that will satisfy your sweet tooth!
INGREDIENTS (4 servings)
- 1 large avocado
- 2 tbsps of maple syrup
- 2 dates
- 2 tbsps of raw cacao powder
- 6 tbsps of almond milk
- 1 tsp of He Shou Wu powder (optional)
- 1/2 tsp of vanilla extract
- 1/2 tsp of salt
- 1 tsp of cacao nibs
- 1/2 cup of raspberries to top
INSTRUCTIONS
- Pour the milk and maple syrup in a medium sized pan at medium heat until warm. Add the dates in the mixture and boil all together for 15 min or until soft.
- Add all the ingredients to your Vitamix-like blender (avocado, cacao powder, salt, He Shou Wu, vanilla extract, milk, maple syrup, and dates) blend until smooth. Add more almond milk to achieve desired consistency.
- Pour into serving containers and refrigerate until its time to eat.
- Serve cold and top with berries (raspberries, blueberries, blackberries) and add cacao nibs to taste.
