The Gigi Salad

My obsession with this salad is not normal. I literally eat it at least 4x a week because I just crave it! 
I love a good raw salad combined with a healthy fat, as it aids in the digestion of the raw vegetables. And due to popular demand, I'm sharing with all of you the recipe for my current favorite salad. So simple, so crunchy, and so yummy. Enjoy!

INGREDIENTS (for the salad)

  • 1 bunch Dinosaur Kale
  • 1 bunch of celery
  • 1 bunch broccoli
  • 1 avocado
  • 1 tsp of hemp seeds

INGREDIENTS (for the dressing)

  • 1/4 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • 2 tbsp of high quality Dijon mustard
  • 1 tbsp of raw honey
  • Himalayan salt & pepper (to taste)

DIRECTIONS

  • Slice all the kale and celery into uniform thin strips.
  • Chop the broccoli florets into small pieces.
  • Slice the avocado into 1/2 inch squares.
  • Whisk together all the ingredients for the dressing, chop and slice the veggies, toss and combine.
  • Top with hemp seeds and salt & pepper to taste.  

BENEFITS

  • Raw vegetables paired with fats, such as olive oil & avocado, are an excellent food combining pair, making the nutrients of these foods easily absorbed.
  • Hemp seeds may be tiny, but they contain a massive amount of protein, including sulfur-bearing amino acids, which build healthy hair, nails, muscle, and skin.
  • Apple cider vinegar is full of protein, B vitamins, enzymes, and probiotics. It's also known to include improved digestion, increased immunity, and stabilized blood sugar levels.
